So how can you savour the season and feel good about what’s on your plate? UBC dietitians will unpack the science behind food, fats, and oils—and put those facts into practice with a live cooking demonstration. Head into the holidays (and the kitchen) empowered with insights to help you eat, drink, and be merry without worry.

Speaker Biographies
Anna Brisco, BSc (Food Nutr)’16
From everyday meals to special celebrations, Anna Brisco loves the experiences and meanings of food. As a queer non-Indigenous white settler living within the unceded, traditional shared territories of the sə̓lílwətaʔɬ, šxʷməθkʷəy̓əmaɁɬ, and Sḵwx̱wú7mesh nations, they acknowledge the complicities and complexities of those identities and experiences. Before completing their UBC Bachelor of Science in Food, Nutrition, and Health (Dietetics major) in 2016, they gained experience in culinary arts, food service, and urban agriculture. They developed their passion for nutrition and education through community-based and programming roles. Having completed their Master of Education at the Ontario Institute for Studies in Education (Tkaronto), they are now a Lecturer in UBC’s Dietetics program.
Bruna Donatti Castro Falci
Bruna Donatti Castro Falci is a registered dietitian with 18 years of clinical experience. She began her career in Brazil, where she earned her Bachelor of Science in Nutrition Science and Dietetics and completed a specialization in Clinical Nutrition and Nutrition Support. After moving to Canada, she completed her Master’s degree in Human Nutrition at McGill University. Since 2022, she has been a lecturer in the Food, Nutrition, and Health Program at UBC. She is deeply passionate about the role of nutrition in supporting recovery, optimizing health, and preventing and treating a wide range of conditions.
